This is our favorite lately... so super easy:

Take a pork butt (or pork shoulder or other pork roast) and put it in your crockpot. Add a big can of green enchillada sauce (make sure the meat is all covered by the sauce). Cook it on low 6-8 hours (I let it go all day while I'm at work, 10-11 hours). Serve over white rice with a side of refried beans, and you have the easiest chili verde ever!

Easy baked spagetti! Cook spagetti and drain. Add one can of spagetti sauce with a can of cream of mushroom. Mix into spagetti. Top with cheese and bake at 350 for 35 minutes. This is the easiest recipe I can come up with at the top of my head. BTW: Due date is July 21 (Glens b-day).

Easy personal Pizzas...let the kids cook!!

I just make up a buisquick batch, and let the kids roll their own little ball out really flat onto a stone or pan. I cook it for like 6 minutes so that it is crispy...then I open a saweet jar of spaghetti sauce, or make my own, and add toppings...Twa-la!! Easy!! OOOOhhh...and if you wanna sneak in some nutrition...spinach. Put it after the sauce before the cheese...my kids gobble it up!!

hmmm...might wanna add the fact that I actually cook the pizza after I add the toppings...LOL!!! I just do it for like 10 minutes, or until "golden brown"....!!!
